INGREDIENTS
6 Tbsp. Kosher Salt
1 Pint Ice Water
1 Tbsp. Cracked Fennel Seed
1 Tbsp. Sugar
2 Tsp Crushed Hot Pepper Flakes
1 Tsp. Caraway Seed
1 Tbsp. Coriander
8 Lbs. Venison
2 Lbs. Pork Fat

INSTRUCTIONS
Grind meat and fat through 3/16 grinder plate. Add all spices in ice water and
mix into meat well. Stuff into casings if you have them, if not wrap it in
plastic wrap and roll it back and forth on counter until it’s tight. Then freeze it
and when you thaw it you can cut into slices and make patties.
