INGREDIENTS
Salt 1/4 cup or 2 OZ.
Pepper 1/8 cup or 1 OZ. or 2TBS.
Sage 1/4 cup or 2 OZ.
Coriander ground 1/2 OZ. or 1TBS.

INSTRUCTIONS
Put all ingredients in closed container and mix well.
Use about 2/3 Venison to 1/3 Pork with fat. Cut Venison
and Pork into cubes for grinding mix well together in large pot adding the seasoning as mixing.
Judge the amount of seasoning by smell (stronger the smell stronger the taste). Cover and
refrigerate overnight. (Hint: Grind small amount first, make patty cook it and try.) If you want a
little stronger taste add some more seasoning, mix well, and then continue grinding.
